Nut Butter Quinoa Balls

5 ingredients, nothing that is hard to find or pronounce and less than 10 minutes of prep time. That’s what this snack recipe is all about. This version uses chocolate peanut butter, but some variations are included below for variety!


Nut Butter Quinoa Balls

Makes 12-15 balls, depending on how large or small you roll them | Time: ~10 minutes


  • 1/2 cup almond meal

  • 1/4 cup chocolate chips

  • 1.5 cups puffed quinoa

  • 1/3 cup peanut butter (with chocolate in this case)

  • 1/3 cup maple syrup


  1. Pre heat oven to 350 degrees

  2. Spread the puffed quinoa on a baking sheet and bake at 350 for ~4 minutes, until very lightly toasted

  3. Place almond meal and chocolate chips in a bowl

  4. Over low heat, melt the peanut butter and maple syrup - until smooth

  5. Add peanut butter/maple mix to the bowl with the dry ingredients and mix until well incorporated

  6. Shape into balls, place on a tray, cover and refrigerate until the balls are solid

  7. Keep in the fridge and grab one whenever you want a little snack!


Any nut butter will work instead of peanut butter… Use almond butter, cashew butter or tahini.

Instead of using almond meal only, you can split it into half shredded coconut and half almond meal or even use a different kind of nut meal, like hazelnut.

If you don’t want to use chocolate chips, use dried fruit like cranberries, dried cherries or maybe chopped dried apricots?! Use your imagination, and perhaps whatever you happen to have in your kitchen.
